What's this blog about?

First of all - granola what?! Granola is a term used to describe 'modern day hippie'. I love being a "granola"! I first heard the term when my little sister and her friends would whisper it behind my back, using it to describe why I was the way I was. Now, I embrace the term!

This blog will focus on all us hippie-at-heart woman who blend in with the rest of the work force 9-5. By day you will find us in our blazers and high heels in our office usually on conference calls or attending meetings; after work we are either trying to find the best deal on organic laundry detergent or whipping up our own detergent in the kitchen. I work full time and attend school part time, and my husband usually puts in 70 hours a week at work; therefore I solely run the household. I take care of the finances, cooking, cleaning, laundry - all while trying to find the most cost-effective and less-harmful-to-the-environment way to accomplish it all!

I write about budgeting, DIY crafts, organizing, cooking, and fashion.

Camping! (Potato Salad recipe)

Well it's that time of year again - camping season! We're getting all our food, drinks, lawn chairs and puppies packed up to go get the trailer and head out to the campground.

As you know, I'm vegetarian. This always makes meal planning a bit more complicated, especially when I have to remember to make healthy, vegetarian friendly, loaded with iron and protein meals that can be cooked over the campfire. Along with veggie dogs & veggie burgers I like to make salads at home to bring along. Store bought potato and macaroni salads are ridiculously overpriced and very unhealthy! Potato Salad

6 boiled potatoes, diced
2 hard boiled eggs, diced
1 cup diced veggies (I use celery and radish!)
1/8 cup diced red onion
3 dill pickles, diced
1tbsp sweet relish
Mayonnaise and mustard to your taste (I prefer to use low/no fat mayonnaise)

Tips:
1) Add  dill and parsley to make your potato salad a little more delicious
2) Modify the veggies, we like A LOT of vegetables in ours, our potato salad tends to be 50% potatoes 50% other veggies
